Roasted Pumpkin and Sour Cream Pasta

cut the pumpkin in half, insert the knife and cut straight down
scoop out the seeds
slice the pumpkin, we're also using the skin, it gets tender after roasting
cut into cubes
slice the garlic head in half
place pumpkin and garlic on a baking sheet
add olive oil, salt, pepper and red pepper flakes
transfer to the oven, roast for 20 minutes, meanwhile, cook the pasta
add pumpkin seeds and sage leaves, roast for 5-10 minutes more
when ready, transfer pumpkin to a food processor, add garlic, broth & lemon juice
add sour cream, Parmesan, salt and pepper
purée until smooth
toss with pasta
add pumpkin seeds & parsley
add pasta cooking water and stir
