Roasted Brussels Sprouts with Beer Braised Onions

cut off the tips, remove the outer leaves

cut in half

combine with olive oil, salt and pepper

arrange Brussels cut side down on a baking sheet, roast for 20 minutes

in the meantime, mince the garlic

thinly slice the onions

heat oil and butter in a skillet

add onions, arrange in a single layer, cook undisturbed 3 minutes

start stirring, cook until softened,  about 10 minutes

add garlic, cook for 2 minutes

stir in salt, pepper and thyme

add maple syrup

stir in flour

add brown beer

cook for 5 minutes until deeply caramelized

add Brussels sprouts

toss, garnish with thyme and red pepper flakes
