Rigatoni with Zucchini and Bacon


cut zucchini into thin slices

chop the onion

mince the garlic

heat oil in a skillet

add butter

add bacon

cook until crispy

remove, leaving grease in the skillet

sauté onion & garlic

deglaze with  a splash of water

stir in spices

add zucchini

stir, cover and cook for 8-10 minutes

in the meantime, cook rigatoni until al dente

stir in tomato paste

scoop up 1 cup cooking water

add 1/2 cup cooking water

drain the pasta

add pasta to the sauce

gradually stir in Parmesan

add bacon

pour in more cooking water

finish of with black pepper & parsley
