Ravioli in Crayfish Tomato Sauce


chop the chives

finely chop the shallot

mince the  garlic cloves

heat butter  over medium,  add garlic  and shallot, cook for 1 minute

add cherry  tomatoes,  salt, pepper  and oregano, cover and braise  for 5 minutes

press with a fork  to release juices

add vegetable broth  and butter,  stir until melted,  simmer for 3 minutes

meanwhile,  boil ravioli  in salted water  for 2-3 minutes

add lemon juice  and saffron

drain the ravioli

toss in ravioli  and crayfish

top with chives  and black pepper
