Ratatouille Chicken Ragu

dice the zucchini

dice the eggplant

core and chop the bell peppers

finely chop the red onion

mince the garlic

heat oil and butter over high

add eggplant and zucchini, cook for 3 minutes

add bell peppers, cook for  3 more minutes

add garlic, onion, fresh thyme, salt, pepper, paprika  and marjoram, cook another  3 minutes

add ground chicken, break up into pieces, cook for 2 minutes

stir in tomato paste and crushed tomatoes, simmer for 20 minutes

meanwhile, boil penne al dente in salted water

when ready, scoop up 1 cup cooking water, add 1/2 cup to ratatouille

drain the penne

toss with ratatouille, add more cooking water, top with black pepper
