Pumpkin Beef Bolognese

cut the pumpkin  in half

scoop out the seeds

cut into slices

then into small cubes

dice the fennel

mince the  garlic cloves

chop the shallots

and the celery stalk

heat oil over,  medium low,  add shallots  and garlic

add celery, cook for 5 minutes

add pumpkin, cook for another  5 minutes

add fennel, cook for 3minutes

add ground beef,  break up into pieces

cook for 10 minutes

stir in thyme,  sage, marjoram,  paprika chili flakes,  salt and pepper

add beef broth,  and bay leaf,  simmer for  10 minutes

meanwhile, bring a large pot  with salted water  to a boil

add tomato purée

stir in  tomato paste

cover, simmer  for 10 minutes

meanwhile, boil the pasta
