Pumpkin Beef Bolognese


cut the pumpkin in half

scoop out the seeds

cut into slices

then into small cubes

finely chop the fennel

mince the garlic

finely chop the shallot

and the celery ribs

heat oil in a large pot, add garlic and shallot

add celery, cook for 5 minutes

add pumpkin, cook for another 5 minutes

add fennel, cook for 5 minutes more

add ground beef, break it up with a wooden spoon

cook for 10 minutes

stir in the spices

add bay leaf, and beef broth, simmer for 10 minutes

meanwhile, bring a pot of salted water to a boil

add puréed tomatoes

stir in tomato paste

cover, simmer for 10 minutes
