Portuguese Rice with Rotisserie Chicken

dice the bell pepper and mince the garlic

dice the onion and chop the olives

heat the oil,  add bell pepper, garlic and onion,  cook for 3 minutes

add pepper, oregano, paprika, cumin, turmeric and rice,  toast for 1 minute

pour in broth,  bring to a boil

simmer until al dente, add broth if needed

stir in parsley, olives and lemon juice

add rotisserie chicken, simmer for  3-5 minutes,  until heated through
