Polish Hunter’s Stew (Bigos)

slice the kielbasa

mince the  garlic cloves

slice the onion

peel and grate  the carrot

heat butter,  add bacon,  cook until browned

add kielbasa, cook  until browned,  remove

add beef chuck,  followed by  pork shoulder,  brown all over

add carrot, garlic  and onion,  cook for 2 minutes

stir in salt, pepper  and tomato paste

deglaze with  red wine

pour in beef broth,  add bay leaves,  simmer for 1 hour

meanwhile,  peel and grate  the apple

thinly slice  the cabbage

add sauerkraut, apple,  cabbage, cumin and  paprika

add the  soaked mushrooms,  strain in the  soaking liquid

add kielbasa  and bacon, cover,  simmer for 1 hour
