Pistachio Chicken and Lemon Orzo

chop the pistachios  using a food processor

cut the chicken  lengthwise in half,  season with  salt, pepper, paprika  and garlic powder

press each chicken fillet  into the pistachios,  transfer to  a baking sheet,  spray with oil

bake for  15-20 minutes  at 400°F/200°C

mince the  garlic cloves

dice the onion

heat butter  over medium,  add garlic and onion,  sauté for 3 minutes

stir in orzo,  cook for  1 minute

pour in  chicken broth,  simmer over  medium low  for 15 minutes,  stir frequently

turn off the heat,  add lemon juice  and Parmesan,  finish off with  black pepper
