Peruvian Beef Stir-Fry

cut the steak  against the grain  in thin slices

combine with salt,  pepper and olive oil

cut the bell pepper  in strips

dice the onion

mince the  garlic cloves

half the tomatoes

chop the parsley

heat oil and butter  over high, place steak  in a single layer,  sear for 2 minutes

stir and cook  for 1 minute

remove from skillet

add bell pepper,  cook for 2 minutes

add garlic and onion,  cook for 1 minute

stir in tomatoes

add vinegar,  soy sauce and  crushed chipotle

deglaze the skillet  with water

stir in parsley  and steak  cook for 1 minute
