Penne with Smoked Salmon and Mascarpone

finely chop the shallot

mince the garlic

cook pasta in salted water

heat oil in a skillet

add pine nuts, toast until golden

remove from skillet

add oil, garlic & shallot, cook for 1 minute

add spices

add spinach, cook until slightly wilted

stir in sun-dried tomatoes

drizzle with lemon juice

add smoked salmon

stir in mascarpone

drain the pasta, reserving 1/2 cup cooking water

add pasta and a splash  of cooking water, stir to combine
