Penne with Italian Sausage and Peas

remove casings from sausages

finely chop the onion

mince the garlic

heat oil and butter over medium, add sausages

break up into pieces, cook until brown

add onion and garlic, cook for 2 minutes

stir in salt, pepper chili flakes and basil

add puréed tomatoes, simmer for 10 minutes

meanwhile, boil penne al dente in salted water

when ready, scoop up 1/2 cup cooking water, drain the pasta

stir in Parmesan

add peas  and 1/4 cup cooking water

toss with penne

finish off with parsley, black pepper and chili flakes
