Peas and Carrots

peel and thinly slice  the carrots

dice the shallot

heat butter  over medium,  add shallot,  sauté for 3 minutes

add carrots,  cook for 1 minute

pour in broth,  bring to a boil,  simmer for  10 minutes  over medium low

stir in cornstarch  and pepper

add peas, simmer for 5 minutes
