Parmesan Tagliatelle  with Buttered Mushrooms

thinly slice the mushrooms

mince the garlic

finely chop the onion

chop the parsley

heat oil in a large skillet

add mushrooms

cook until they release moisture

add butter, cook until golden brown

season with salt and pepper

add onion and garlic cook until fragrant

stir in parsley

remove from skillet

cook the pasta

add oil, black pepper and red chili flakes, toast for 1 minute

add butter, stir until melted

scoop up 1/2 cup cooking water, drain the pasta

toss pasta with butter, add 1/4 cup cooking water

stir in Parmesan

add mushrooms

add a splash of cooking water, if needed
