Pad Thai Chicken Skewer Salad

thinly slice the chicken

in a bowl, combine soy sauce, fish sauce, brown sugar, lime juice and chili flakes

add chicken, toss to coat, set aside to marinate

meanwhile, boil rice noodles according package directions

when ready, drain and run under cold water

to a jar, add  soy & fish sauce, veg & sesame oil, sugar, lime juice  and chili flakes

add grated garlic, stir to combine

chop the scallions

roughly chop the peanuts

slice the radishes

chop the cilantro

thread the chicken onto skewers bake for 15 minutes at 400°F/ 200°C

toss noodles with scallions, radishes, basil leaves, cilantro, peanuts and prepared dressing
