mince the garlic

finely chop the shallot

heat oil in a large nonstick skillet

add pancetta, cook until crispy

remove from skillet

discard excess grease, leaving 1 tbsp in the skillet

add garlic and shallot, cook until soft

pour in vodka

simmer for 3 minutes, stir and scrape up the  brown bits

add tomato paste, stir for 1 minute

stir in orzo and spices

pour in broth

simmer for 15 minutes

stir often

when ready, stir in mascarpone

add Parmesan

finish off with black pepper, red pepper flakes, pancetta and thyme
