Orecchiette with Mushrooms and Spinach


thinly slice  the mushrooms

finely chop the shallot

mince the garlic

cook orecchiette in generously salted water

heat the skillet over high, add mushrooms

cook until they release moisture, about 5 minutes

add olive oil, cook until brown

add shallot and garlic, cook for 3 minutes

stir in spices

add spinach, stir  until slightly wilted

pour in cream, bring to a simmer

scoop up 1/2 cup cooking water, drain the orecchiette

stir in pecorino

add butter and orecchiette, stir until combined

add a splash of cooking water, red pepper flakes and black pepper
