One Skillet Meatballs with Orzo and Feta Pesto

place ingredients for the meatballs in a bowl

mix until just combined

roll into balls

mince the garlic

finely chop the onion

heat oil and butter in a skillet

add meatballs

brown on all sides, about 10 minutes

remove from skillet

add olive oil

add garlic and onion, sauté until fragrant

stir in orzo

pour in broth

simmer for 12 minutes

meanwhile, add feta, pine nuts, spices and oil to your food processor

pulse until just combined

add basil, pulse very briefly

when orzo is ready

stir in feta pesto

slide meatballs back  into the skillet

cook until warmed trough
