One Pot Rice with Ground Beef

chop the peppers

finely chop the shallot

mince the garlic

heat oil over medium, add peppers, cook for 3 minutes

add garlic and shallot, cook for 2 minutes

add ground beef, break up into pieces, cook until it  starts  to brown

stir in salt, pepper, paprika, chili flakes, oregano and cinnamon

add tomato paste, stir until combined

stir in rice

add chicken broth and chickpeas, simmer for  10 minutes

stir occasionally

meanwhile, grate the Manchego cheese

top rice with grated cheese, cover, simmer for 2 minutes

when ready, finish off with parsley
