One Pot Ratatouille Orzo

chop the bell peppers

cut the eggplant  into 1-inch/2,5cm  thick pieces

cut the zucchini  into 1-inch/2,5cm thick pieces

finely chop the shallot

mince the garlic

heat oil over medium high, add eggplant, cook for 3 minutes

add bell peppers, cook for 3 minutes more

stir in zucchini

add garlic and shallot

stir in salt, pepper and herbs de Provence, cook for 3 minutes

add 1 cup chicken broth, simmer for  5 minutes

stir in tomato paste

add bay leaf and orzo

add whole peeled tomatoes

add the remaining chicken broth, simmer for 15 minutes

stir frequently to prevent orzo from sticking

when ready, stir in basil leaves, top with  black pepper
