One Pot Eggplant Parmesan Orzo

mince the  thyme leaves

dice the shallot

mince the  garlic cloves

dice the eggplant

chop the sun-dried tomatoes

heat oil over medium, add eggplant

cook for 5 minutes, add more oil if needed

add garlic and shallot, sauté for 2 minutes

stir in pepper, thyme and soy sauce

add orzo

add half of  the chicken broth

stir in  tomato paste

add sun-dried  tomatoes and the remaining  chicken broth

simmer for 10-15 minutes

stir occasionally to prevent orzo from sticking to the skillet

add lemon juice and Parmesan

top with  black pepper, chilli flakes  and thyme leaves
