One-Pot Chicken Stroganoff with Orzo

slice the mushrooms, tear the shiitakes  into pieces

dice the onion

mince the  garlic cloves

cut chicken thighs  into bite-size pieces

heat oil and butter  over medium high

add chicken thighs

add salt, pepper and paprika, cook until  golden brown

remove from skillet

add mushrooms, cook until they release moisture

stir in butter

add garlic and onion, cook until fragrant

deglaze with  white wine,  simmer for  2 minutes

stir in orzo

pour in  chicken broth, bring to a boil

simmer for  10 minutes

stir occasionally, add more broth  if needed

stir in balsamic vinegar, mustard and  white miso paste

add chicken and  its released juices, cook for 5 minutes

turn off the heat, add parsley and  sour cream

stir to combine

finish off with  parsley, and  black pepper
