One-Pot Chicken Stroganoff with Orzo

thinly slice the mushrooms, tear shiitakes into pieces

finely chop the onion

mince the garlic

cut chicken thighs into bite-size pieces

heat oil and butter in a large skillet

add chicken thighs

season with salt, pepper and paprika, cook until golden-brown

remove from skillet

add mushrooms, cook until they start to release moisture

stir in butter

add garlic and onion, cook until fragrant

pour in white wine, cook for 2 minutes

add orzo

pour in chicken broth, bring to a boil

cook for 10 minutes

stir occasionally, add more broth if needed

stir in balsamic vinegar, mustard and  white miso paste

add chicken and any accumulated juices, cook for 5 minutes

turn off the heat, add parsley & sour cream

stir to combine

finish off with parsley, and black pepper
