One-Pot Chicken and Chorizo Orzo

slice the chorizo

mince the garlic

finely chop the shallot

cut chicken fillets into bite-sized pieces

heat oil over medium, add chorizo, cook for 3 minutes

add chicken, cook until it starts to brown

season with salt, pepper, paprika and thyme

remove from skillet

reduce heat, cook garlic and shallot for 1 minute

stir in orzo

pour in broth, cover, cook for 10 minutes

when ready, stir in tomato paste

add chicken and orzo, simmer for 3 minutes

stir in mascarpone

add Parmesan

top with parsley and chili flakes
