'Nduja Mussels

chop the parsley

slice the onions

grate the garlic

prepare 2 large bowls  with cold water

add the mussels  to one bowl,  clean and throw  the cleaned  mussels to the  other bowl

clean the mussels  by rubbing off  any leftovers of seaweed,  sand or barnacles

remove the beards  attached to the sides  of the shells by  tugging firmly

you can also use  a knife, make sure to  tug it toward  the hinge of the shell

if you find any mussels  with open shells,  pinch them between  your fingers, discard if  they don't close

drain the cleaned mussels

heat oil and butter  over medium high,  add onions and garlic,  cook for 1 minute

pour in white wine,  simmer for 2 minutes

add 'Nduja,  salt and pepper,  stir to combine

add cream,  lemon juice  and parsley,  bring to  a simmer

add mussels,  cover and steam  for 8 minutes

uncover,  stir and cook  for 1 minute
