Mussels in Spicy Garlic Miso Broth

how to clean mussels + one-pan dish with mussels in garlic miso broth

prepare 2 bowls with cold water

add the mussels to one bowl trow the cleaned mussels in the other

remove the beards attached to the side of the shell by tugging firmly

you can also use a knife, make sure to tug it towards the hinge of the mussel shell

rub off any leftovers of seaweed, sand or barnacles

if you find any mussels with open shells, pinch them between your fingers. If the mussel closes, it's alive. If it doesn't , discard

drain the cleaned mussels, set aside in the fridge

in the meantime, chop the garlic, onion & tomato

heat the oil, add garlic, onion and ginger

sauté until soft, then add the tomato

add miso & broth

fish sauce & mirin

add the mussels

cover and steam  for 8 minutes

stir, cover and steam  for 2 minutes more

turn off the heat, add butter & soy cream. cover and let sit for 1 minute more
