Mushroom Chicken & Wild Rice Soup

slice the mushrooms

chop the carrot

finely chop the onion

mince the garlic

chop the parsley

heat oil over medium low, add carrot, onion and garlic, cook for 3 minutes

add mushrooms, cook until they  release moisture and  start to brown

stir in pepper, thyme, rosemary, paprika and wild rice

pour in chicken broth, bring to a boil

add soy sauce and chicken, cover, simmer for 15 minutes

when ready, remove chicken

add parsley and cream, simmer for 5 minutes

meanwhile, shred the chicken

return chicken to the pot, serve!
