Mushroom Alfredo Pasta

grate the Parmesan

mince the garlic

chop the mushrooms

chop the parsley

boil pasta al dente in salted water

heat your skillet over medium high, place mushrooms in a single layer, cook for 1 minute

next, stir and cook until they release their moisture

add olive oil, cook until golden brown

add salt, pepper, thyme, dried onion and balsamic vinegar

add garlic, cook for 2 minutes

pour in cream, bring to a simmer

reduce heat to low, add Parmesan

stir until combined

stir in butter and parsley

scoop up 1 cup cooking water, drain the pasta

add pasta and 1/4 cup cooking water toss to combine

finish off with black pepper and parsley
