Miso Salmon  with Cashews

grate ginger  and garlic

add miso and marinade

stir until combined

add salmon

turn to coat, set aside

make the cashew topping

cut bok choy  in half

chop the  scallions

heat oil  over medium

add butter

sauté bok choy  for 2-3 minutes

season with  salt and pepper

turn, fry for  1 minute

remove from skillet

add salmon

cook until  golden brown, about 3-4 minutes per side

add bok choy

pour in marinade, simmer for  5-8 minutes

add scallions

garnish with  cashew topping
