Mascarpone Butternut Squash Pasta with Pork

peel the squash and remove the seeds

cut into cubes

mince the garlic

heat oil and butter over medium,  add squash

cook until it starts to brown, about 5 minutes

add ground pork, break up into pieces

add salt, pepper, Italian seasoning, chili flakes and garlic,  cook for 2 minutes

pour in chicken broth, cook for 10 minutes

meanwhile, cook the pasta al dente in salted water

when ready, scoop up 1/2 cup cooking water, drain the pasta

toss squash sauce with pasta, mascarpone and Parmesan

add a splash of cooking water, if needed
