Lemony Chicken Couscous Soup


chop the carrot  into half-moons

finely chop the onion

chop the  celery stalks

mince the  garlic cloves

chop the parsley  and dill

heat oil over  medium low,  add onion, garlic,  celery and carrot,  cook for  3 minutes

add chicken thighs

pour in  chicken broth

add salt, pepper,  thyme and coriander,  bring to a boil,  cover and simmer  for 20 minutes

remove chicken  from pot

add pearl couscous  and lemon juice,  simmer for 9 minutes

meanwhile,  shred the chicken

when ready,  stir in chicken,  parsley and dill
