Lemon Rice with Seared Cod

pat the cod loins dry, season with salt, pepper and cumin

dice the onion

mince the  garlic cloves

chop the parsley

heat oil and butter  over medium high,  add cod loins

sear for 2 minutes  per side,  remove from skillet

 add garlic and onion, cook for  2 minutes over medium

stir in rice

pour in  chicken broth,  cover, simmer over  low until al dente

stir in  curry powder,  parsley and  lemon jucie

add cod loins,  cover and steam  for 5 minutes
