Lemon Butter Cod

mince the  garlic cloves

chop the parsley

pat the cod loin dry,  rub both sides with  salt and pepper

dredge in flour

heat oil and butter  over medium high,  add cod

sear 3 minutes  per side

remove from skillet

add garlic,  cook for 1 minute

deglaze with  vegetable broth,  simmer for 1 minute

add butter,  stir until melted

add lemon zest

stir in lemon juice  and parsley

add cod, simmer  for 2 minutes

garnish with  lemon slices
