Hummus and Mozzarella Toast

thinly slice  the red onion

combine with apple vinegar, brown sugar, salt and boiling hot water

add garlic, lemon juice, salt, pepper, cumin and oil to a food processor, blend for 2 minutes

add chickpeas, tahini, sesame oil and ice water

blend until smooth

toast the bread

spread the hummus, top with mozzarella pearls

add sun-dried tomatoes and pickled red onion

finish off with pesto, black pepper, chili flakes and basil leaves
