Hasselback Nduja Eggplant

cut eggplants lengthwise, keeping them connected  at the stem

to a baking dish,  add marinara, Nduja, garlic and basil

stir to combine,  place eggplants on top, season with  salt and pepper

cover with  aluminum foil,  bake for 50 minutes

sprinkle 1/2 cheese mixture between  each slice

sprinkle the remaining cheese on top,  bake for 10 minutes
