Gin Tonic  Salmon Tartare

dice the shallot

chop the dill

dice the salmon into  1/8 inche (3mm) cubes

to a bowl, add salmon,  shallot, dill, sugar,  salt, gin and tonic

add black pepper  and lemon zest,  toss to combine

spoon the tartare  into a pastry ring and  lightly press to level

finish off with olive oil,  sour cream,  pink peppercorns, capers, black pepper,  lemon zest, and dill
