Firecracker Chicken Meatballs

grate ginger  and garlic cloves, chop the scallions

combine ground chicken with spices, egg yolk and bread crumbs

roll into 2-tbsp sized balls

heat oil and butter  over medium  in a nonstick skillet

add meatballs, cook until browned, about 8 minutes

remove from skillet

add garlic  and ginger, cook until fragrant

deglaze with 1/2 cup water

add sweet chili, soy sauce,  fish sauce,  oyster sauce  and lime juice

stir to combine, bring to a simmer

stir in sriracha and scallions

add meatballs

and their juices, stir to coat

simmer for  10 minutes,  meanwhile,  chop the cilantro

finish off with chili flakes and cilantro
