Fiery Scallion Beef

thinly slice the steak

combine with sambal oelek, soy sauce, cornstarch and oil

finely chop the white part of the scallions, slice the green part into larger pieces

mince the  garlic cloves

grate the ginger

prepare the sauce: combine sesame oil, low sodium soy sauce,  oyster sauce, sambal oelek

mirin, water,  white pepper  and cornstarch

heat wok until smoking hot, add oil and beef

place in  a single layer, sear for  30 seconds

turn,  sear for 30 seconds

remove from wok

add oil, garlic, ginger  and white parts  of the scallions, cook for  30 seconds

stir in the  green parts

add beef, stir-fry for  30 seconds

pour in the  prepared sauce, stir-fry  for 1 minute
