Fiery Scallion Beef

thinly slice the steak

combine with sambal oelek, soy sauce, cornstarch and oil

finely chop the white part of the scallions, slice the green part into larger pieces

mince the  garlic cloves

grate the ginger

prepare the sauce: combine sesame oil, low sodium soy sauce,  oyster sauce, sambal oelek

mirin, water,  white pepper  and cornstarch

heat your wok  until smoking hot, add 1 tbsp oil and beef

place in a single layer, sear for 30 seconds

turn, sear for 30 seconds more

remove from wok

add 1 tbsp oil, garlic, ginger and white scallion parts, cook for 30 seconds

stir in the  green parts

add beef, stir-fry for  30 seconds

add the prepared sauce, stir-fry for 1 minute, done!
