Eggplant Zucchini Rigatoni with Bacon

cut eggplant into cubes

cut zucchini into bite-sized pieces

mince the garlic

finely chop the onion

heat oil in a skillet

add eggplant

add salt, pepper and  extra oil, sauté until soft

remove from skillet

add oil and zucchini

season with salt & pepper, sauté until soft

in the meantime, cook the pasta

remove zucchini from skillet

cook bacon until crisp

add onion and garlic, cook until fragrant

stir in spices

add eggplant, zucchini  and sun dried tomatoes

add some pasta cooking water

stir in tomato paste

drain the pasta

add basil and pasta

stir in Parmesan, serve
