Eggplant Miso Pesto Pasta

make the pesto, add basil to a food processor

Add Parmesan, lemon juice, pine nuts and miso paste

add olive oil while food processor is running

season with pepper, set aside

cook the pasta, cut the eggplant into cubes

heat olive oil in a skillet, add eggplant, sauté for 5-8 minutes

meanwhile,  mince the garlic

add garlic, cook until fragrant

season with salt, pepper and red chili flakes

add miso pesto

stir in the pasta, add a splash of pasta water
