Spanish Rice Soup

cut chicken thighs  into bite-sized pieces

deseed and chop  the bell pepper

slice the chorizo

halve the snow peas

dice the onion

mince the  garlic cloves

heat oil over  medium high,  add chorizo,  cook for 2 minutes,  remove from pot

add bell pepper,  onion and garlic,  cook for 2 minutes

add salt, pepper,  cinnamon  and nutmeg

stir in rice

add crushed  tomatoes  and chicken broth,  bring to a boil

add chicken  and snow peas,  cover, simmer  over low  for 15 minutes

uncover,  add chorizo  and saffron,  simmer for  3 minutes
