Easy Cod with Ratatouille

pat the cod loin dry,  season both sides  with salt, pepper  and paprika

mince the  garlic cloves

dice the shallot

deseed and slice  the pepper

chop the zucchini into  bite-sized pieces

cut the fennel  lengthwise into  4 pieces,  then thinly slice

heat oil and butter  over medium high,  add cod loin

sear 3 minutes  per side

remove from skillet

add zucchini,  sauté for 3 minutes

add bell pepper  and fennel,  sauté for 3 minutes

add garlic and shallot,  cook for 2 minutes

stir in salt, pepper,  herbs de Provence  and tomato paste

add cherry tomatoes  and vegetable broth,  cover and simmer  for 10 minutes  over low

when ready,  add cod loin

top with capers,  simmer for  3 minutes
