Easy Cod with Braised Tomatoes

pat the  cod fillets dry, season with salt and pepper

mince the garlic

finely chop the shallot

chop the parsley

heat oil and butter over medium high, add cod fillets

sear 2 minutes per side

remove from skillet

add cherry tomatoes, cover, braise for 5 minutes

press with a fork  to release juices

add shallot, garlic, salt, pepper and dried thyme

cover, braise for 5 minutes more

pour in vegetable broth, bring to a boil

add butter and parsley, stir until melted

add cod fillets, simmer for 5 minutes

sprinkle with lemon juice and parsley
