Crispy Parmesan Chicken

cut the chicken breasts  in half lengthwise

gently pound the chicken

place flour and panko in a shallow bowl

whisk eggs with Parmesan, salt, pepper and paprika

dip chicken into flour

dip into egg mixture

dredge in panko

thinly slice the garlic

chop the sage leaves

chop the green peppercorns

pour oil in a skillet, heat over medium

add 2 chicken pieces

fry until golden brown, 2-3 minutes per side

transfer to a  paper towel-lined plate

repeat with remaining  2 chicken pieces

discard oil and  wipe skillet clean

add olive oil and butter

add garlic, sauté until soft

add sage leaves, cook for 30 seconds

add green peppercorns

pour in white wine, cook for 2 minutes

add chicken broth, salt, pepper and lemon juice

stir in cream and Parmesan bring to a simmer

add chicken, gently simmer for 2 minutes

top with sage leaves and lemon slices
