creamy tomato salmon with chorizo

finely chop the chorizo, mince the garlic, cut the shallot

heat the skillet, add oil and chorizo

fry until crispy, remove from skillet

season the salmon with salt and pepper

add to the pan, sear about 3-4 minutes on each side

remove from pan, set aside

cook shallot and garlic until softened

stir in tomato sauce, cook for 5 minutes

add cream



season with salt, pepper & chili flakes

stir in sun-dried tomatoes and fresh oregano

simmer for 3 minutes

add salmon back to the skillet, cook for 3 more minutes
