creamy tomato salmon with chorizo

dice the chorizo, mince the garlic cloves, dice the shallot

heat oil over high, add chorizo

cook until crispy, remove from skillet

season salmon with salt  and pepper

add to skillet  sear for 3 minutes

turn,  sear for  3 minutes more

remove from skillet

add shallot  and garlic cook for 2 minutes

add puréed tomatoes, simmer for  5 minutes

pour in cream

     add Parmesan

stir until combined

season with salt, pepper and  chili flakes

stir in  sun-dried tomatoes and oregano

simmer  for 3 minutes

add salmon,  simmer for 3 minutes more
