Creamy Thai Red Curry Udon Noodles

dice the shallot

mince the  garlic cloves

grate the ginger

boil udon noodles  according to  package directions

heat oil over  medium low

add garlic, shallot  and ginger,  cook until soft

add tomato paste,  stir until  darker in color

stir in  Thai red curry paste

pour in  coconut milk

add soy sauce,  fish sauce,  sesame oil,  white miso paste, sriracha and  lime juice

stir to combine, simmer for  5 minutes

drain the noodles, run under  cold water

add spinach, stir until wilted

add basil,  black pepper and noodles

toss to combine
