Creamy Mushroom Pierogi

dice the onion
mince the garlic clove
chop the parsley and grate the carrot
chop the mushrooms
cook mushrooms over high heat until they release moisture
add butter, onion, garlic and carrot, cook for 3 minutes
stir in salt, pepper, thyme and flour
add chicken broth, bring to a simmer
add parsley and cream, simmer for 5 minutes over low heat
meanwhile, boil pierogi in salted water, drain
toss in pierogi
