Creamy Cod Potato Skillet

pat the cod loins dry, season with  salt and pepper

mince the  garlic clove

dice the shallot

cut the asparagus into small pieces

chop the chives

peel and cut the potatoes into cubes

transfer potatoes  to a pot, fill with hot water, add salt and boil for 10 minutes

heat oil and butter over medium high, add cod loins

sear 2 minutes  per side

remove from  skillet

add garlic, shallot  and asparagus,  sauté for 3 minutes

pour in cream,  bring to a simmer

drain the potatoes

add potatoes  and cod,  simmer for  3 minutes

finish off with  lemon juice,  black pepper  and chives
