cut chicken  into strips

dice the shallot

boil penne  al dente in  salted water

heat oil over  medium high

add chicken

cook until it starts to brown

add garlic and shallot,  cook for 2 minutes

stir in salt, pepper,  red pepper flakes,  paprika, oregano  and sage

deglaze with  chicken broth

add tomato paste

and sambal oelek,  stir to combine

stir in  cherry tomatoes

add puréed tomatoes, bring to a boil

add cream

drain the penne,  reserving 1/4 cup  cooking water

stir in Parmesan

toss in penne

stir in parsley
