Creamy Cajun Pepper Salmon

pat the salmon fillets dry, rub both sides with cajun seasoning

finely chop the shallot

mince the garlic

remove veins and seeds from bell peppers, thinly slice

heat oil and butter in a nonstick skillet

add salmon fillets

cook, 3-4 minutes per side

remove from skillet

add bell peppers, sauté for 5 minutes

add garlic, shallot and cajun seasoning, cook for 3 minutes

deglaze wit chicken broth simmer for 1 minute

pour in cream, bring to a simmer

stir in Parmesan

return salmon to the skillet, simmer for 3 minutes

meanwhile, chop the parsley, sprinkle lemon juice

finish off with parsley, black pepper and red pepper flakes
