Creamy Bean Soup with Sausage

dice the onion

mince the  garlic cloves

heat oil over  medium high

add  Italian sausage

break up  into pieces, cook until browned, about 5 minutes

add onion  and garlic, cook for 3 minutes

stir in salt, pepper, thyme, oregano,  fennel seeds  and chili flakes

pour in  chicken broth and tomato purée

stir in  tomato paste, bring to a boil

add beans

cover, simmer  for 15 minutes

meanwhile, chop the parsley

pour in  cream

turn off the heat, stir in  Parmesan

finish off with  black pepper  and parsley
